Eating Gluten Free Today: What It Is, Who It's For and What It Looks Like

What eating Gluten Free means, who it started for, and why so many people choose it today. A friendly guide, no fear of gluten, plenty of cravings.

A few years ago, saying “I eat Gluten Free” at a dinner with friends almost guaranteed a long explanation. Puzzled looks, questions, someone offering you “just a little piece.” Today the conversation is different.

We recently shared an article from Revista Perfil on @truefood.cr, “Dieta sin gluten, más que una moda, una apuesta por el bienestar” (roughly: “Gluten Free eating, more than a trend: a commitment to well-being”), written by Ester Spencer. We liked it because it puts into words something we see every day: what started as a medical need is now also a choice.

First, the basics: what is gluten?

Gluten is a protein found in wheat, barley and rye. It’s what gives dough its stretch and that texture we associate with classic bread.

And we want to be clear here: gluten isn’t the bad guy. For lots of people, it works just fine. Some bodies simply don’t get along with it, and for those people, changing the way they eat makes all the difference.

Who did it start for?

Eating Gluten Free started as a necessity. For people living with celiac disease or gluten sensitivity, avoiding it isn’t an option or a trend: it’s part of everyday life. If you suspect gluten doesn’t agree with you, the best move is to talk it through with your doctor before drawing conclusions on your own.

And why are more people choosing it today?

Today it’s not just the people who need it. More and more people choose to eat Gluten Free for their well-being, because it helps them feel better about what they eat. There’s no single reason and no rule that applies to everyone: each person finds their own way and their own pace. What has changed is that it’s no longer unusual, and it’s no longer something you have to explain at every table.

What it looks like today

This is the biggest shift. For years, eating Gluten Free meant settling: dry bread that crumbled, tasted like cardboard, and that you ate because there was nothing else. The assumption was that you’d have to give something up.

It doesn’t have to be that way anymore. Today you can have golden toast at breakfast, Friday burgers with friends over, pizza with the cheese stretching, and a cookie fresh out of the oven when a craving shows up out of nowhere. All without feeling like you’re eating “the second-best version.”

That’s why True Food exists. We make bread and treats for everyone who loves good food, whether they have celiac disease, gluten sensitivity, or just want to eat something delicious. Our order is clear: delicious, healthy and Gluten Free. In that order. If it’s not delicious, it’s not True Food.

We have White Bread for every day, Seeds Bread (which is also vegan) for that avocado breakfast, French Bread for bruschetta or soup, Buns for burger night, Pizza Crust for pizza night, and Cookie Dough for when what you need is a treat. Everything arrives frozen, so you can buy it today and enjoy it whenever the craving hits.

Eating Gluten Free isn’t about giving things up anymore. It’s about choosing delicious.
